What is a Food Allergy?
A food allergy is an immune system response. It occurs when the body mistakes an ingredient in food — usually a protein — as harmful and creates a defense system (antibodies) to fight it. Food allergy symptoms develop when the antibodies are battling the “invading” food. The most common food allergies are peanuts, tree nuts (such as walnuts, pecans and almonds), fish, and shellfish, milk, eggs, soy, gluten and wheat.
What Is Food Intolerance?
Food intolerance is a digestive system response rather than an immune system response, but can trigger an immune response in some individuals. It occurs when something in a food irritates a person’s system or when a person is unable to properly digest or breakdown the food. Intolerance to lactose, which is found in milk and other dairy products, is the most common food intolerance.
What Are the Symptoms of a Food Allergy?
Symptoms of a food allergy can range from mild to severe, and the amount of food necessary to trigger a reaction varies from person to person. Symptoms of a food allergy may include:
Rash or hives
Shortness of breath
Swelling of the airways to the lungs
What Are the Symptoms of Food Intolerance?
Some symptoms of a food intolerance may include (but are not limited to):
Gas, cramps, or bloating
Diarrhoea and/or Constipation
Irritability or nervousness
Breathing problems like asthma
Skin issues including acne and eczema
Hormonal and Reproductive issues
How Common Are Food Allergies and Intolerances?
Food allergies and intolerances affect every age group from infancy to elderly and can arise at any given time in your life. Food intolerances are much more common. In fact, nearly everyone at one time has had an unpleasant reaction to something they ate. Some people have specific food intolerances. Lactose and gluten intolerance, being the most common food intolerances we see in the clinic on a regular basis.
What Causes Food Allergies and Intolerances?
Food allergies often run in families, suggesting that the condition can be inherited. There are many factors that may contribute to food intolerance. In some cases, as with lactose intolerance, the person lacks the chemicals, called enzymes, necessary to properly digest certain sugars orproteins found in food. Also common are intolerances to some chemical ingredients added to food to provide color, enhance taste, and protect against the growth of bacteria. These ingredients include various dyes, Aspartame and other fake sugars and monosodium glutamate (MSG), a flavor enhancer.
Substances called sulfites are also a source of intolerance for some people. They may occur naturally, as in red wines or may be added to prevent the growth of mold. Salicylates are a plant chemical found naturally in many fruits, vegetables, nuts, coffee, juices, beer, and wine. Aspirin also is a compound of the salicylate family. Foods containing salicylate may trigger allergy symptoms in people who are sensitive to aspirin. Of course, any food consumed in excessive quantities can cause digestive symptoms.
How Can You Tell the Difference ?
Food allergies can be triggered by even a small amount of the food and occur every time the food is consumed. People with food allergies are generally advised to avoid the offending foods completely. Food allergies are more easily detected as the reaction is more often profound and easily connected to the offending item(s).
On the other hand, food intolerances often are dose related and the reaction can be accumulative, delayed and rather subtle, in spite of the possibility of their involvement in some rather unpleasant and slowly degenerative conditions. People with food intolerance may not have symptoms unless they eat a large portion of the food or eat the food frequently. For example, a person with lactose intolerance may think they are able to drink milk in coffee but becomes sick if he or she drinks several glasses of milk. Too much creates flare ups in our systems.
Food allergies and intolerances also are different from food poisoning, which generally results from spoiled or tainted food and affects more than one person eating the food. Your health care provider can help determine if you have a food allergy or intolerance, and establish a plan to help eliminate or control your symptoms.
How Are Food Intolerances Discovered?
Most food intolerances are found through various types of tests or indeed trial and error (food elimination) to determine which food or foods are causing your symptoms. Modern technology has brought the science of intolerance testing to whole new level of accessibility and accuracy. How Are Food Intolerances Treated?
Treatment for a food intolerance is based on avoiding your intake of problem foods and treating symptoms when they arise.

Can Food Intolerances Be Prevented?
Taking a few simple steps can help you prevent the symptoms associated with food intolerance.
Learn which foods are causing you to have symptoms and remove or limit your intake to amounts you can handle.
When you dine out, enquire about how your meal will be prepared. Some meals may contain foods you cannot tolerate, and that may not be evident from the description on the menu.
Learn to read food labels and check the ingredients for problem foods. Don’t forget to check condiments and seasonings. They may contain ASPARTAME or MSG or another additive that can lead to symptoms.
What is Homeopathy?
Homeopathy is a modality, or a form of medicine which involves treating a patient with highly diluted substances,in tablet , pilule or liquid form, designed to stimulate the body’s own system of healing. Based on the patient’s specific symptoms, a homeopathic practitioner, by fully understanding the manner in which the patient experiences their illness, will accurately match a chosen medicine to stimulate the healing process.. ‘Like with Like’.
Homeopathy is based on the principle of treating ‘like with like’, that is, a substance which causes symptoms when taken in large doses, can be used in small amounts to treat those same symptoms.
For example, drinking too much coffee can cause sleeplessness and agitation, so according to this principle, when made into a homeopathic medicine, it could be used to treat people with these symptoms.
This concept is sometimes also used in conventional medicine, except that with homeopathic medicines the substances that are used are done si in ultra high dilutions, which renders them non-toxic.
The science behind the medicine of Homeopathy:
Homeopathic medicines otherwise called remedies are prepared by specialist pharmacies using a careful set process of dilution and succussion.
As yet, science has not been able to explain the mechanism of action of ultra high dilutions in the body, but scientific experiments have repeatedly demonstrated that homeopathic remedies prepared to a precise methodology can be shown to cause biological effects. For example, the hormone thyroxine prepared as a homeopathic ‘30C’ dilution has been shown to slow down the process of metamorphosis of tadpoles into frogs.
One theory is that during the production of a homeopathic medicine, the dilution and agitation processes cause an interaction between the original material (e.g. a plant such as Arnica, Calendula or Belladonna ) and the water and alcohol (which opens the carbon structure of the water) it is mixed with, . This creates tiny new structures (nanostructures) which are the ‘active ingredient’ and remain present even when the sample has been diluted many, many times, even beyond Avogadro’s number.
There is also a growing body of research evidence that homeopathic medicines have clinical effects. It’s persistent use for centuries and it’s loyal following also bears testimony to the benefits experienced by it’s millions of users throughout the world.
The principle of treating “like with like” dates back to Hippocrates (460-377 BC) but in its current form, homeopathy has been widely used worldwide for more than 200 years.
It was discovered by a German doctor, Samuel Hahnemann, who, horrified with the harsh medical practises of the day (which included bloodletting, purging and the use of poisons such as arsenic), sought a manner of treatment which would reduce reduce the damaging side-effects associated with medical treatment of his day
He began experimenting on himself initially and thereafter on a group of healthy volunteers, giving ever reducing medicinal doses, and found that as well as reducing toxicity, the medicines were actually proving to be more and more effective as he reduced the dose.
He also observed a direct correlation between the symptom picture caused by toxic ‘medicines’ such as mercury, were almost a mirror image, or very similar to those of the disease states they were being used to treat e.g. mercury to syphilis, which lead to the principle he described as ‘like cures like’.
Hahnemann, with rigorous scientific discipline, diligently documented his research and his texts formed the foundations of homeopathic medicine as it is practised today. A BBC Radio 4 documentary aired in December 2010 described Hahnemann as a medical pioneer who worked tirelessly to improve medical practice, insisting that medicines were tested before use, not a common practice in the application of early medicine.

I have spent my life exploring and trying to understand the powerful influence that the mind had on the physical body, and if you extrapolate this concept, then the influence of the mind on your, mine and everyone's health.
I had explored all of the available ‘sciences’ targeting health management and restoration, and although not the popular methodology, I was most impressed by the art of Homeopathy, and it’s principles of cure.
I studied this methodology in depth, trained extensively in its application, applied my skill to the benefit of many many patients, and indeed even founded the Irish College of Homeopathic Medicine over a decade ago, and it still continues to produce some of the very finest practitioners in the western world of this noble medicine.
In further pursuit of excellence in the use of the power of the subconscious mind, I completed my studies in the field of hypno-psycho-therapy at the Hypnosis Training Institute in San Francisco, achieving the title of Master Hypnotherapist. This institute of learning is accredited with a state licence by the state of California, this status being the gold standard for such training.
In my quest to achieve a excellence in health care, my journey brought me more and more in the direction of “establishing” causation, either physical or mental/emotional ( or as it transpired; BOTH ) of health derailment, I have created a very elegant combination of approaches, which today are the foundation of my clinic.

Over the past 23 years, Donna has trained to be a certified clinical Nutritionist and Herbalist, as well as a Massage therapist and Birth Doula, among other modalities in Colorado, USA. She returned to Kerry with her family in 2019 to join Ray in the Clinic. Donna's focus in the clinic is nutrition and herbal remedies, women's and children's health, hormones, reproductive health, weight loss and metabolism, digestive issues and more.
Donna provides thorough recommendations for her clients including handouts on food avoidances and links to her recipes for inspiration when making dietary changes. She can also recommend and formulate custom herbal remedies, if desired, to help facilitate and restore balance to your system.
